Our last stop was a tour of Remy Martin cognac operations. It is where the corporate office is located and makes one of the finest cognac's in the world. We saw the process from the 2 grapes - ugmi blanc and petite champagne -where they are blended together and distilled to make cognac. We saw 115 year oak barrels where they age any where from 4 to 60 years or longer. Then we had a sampling of 2 of their cognacs along with a goat cheese & dried tomato appetizer and a caramel biscuit. Everyone agreed that eating and drinking was a good thing. They are the only cognac makers that have a woman as master taster mixer and has been doing it for 10 years on her own and 20 years as an apprentice. Remy Martin is 140 years old and still a family owned business.
